Black Pearl Mushroom Stroganoff

A vegetarian twist on the classic beef stroganoff, using black pearl mushrooms to create a rich and hearty dish.

Ingredients:

   •   2 cups black pearl mushrooms, sliced

   •   1 onion, thinly sliced

   •   2 cloves garlic, minced

   •   1 cup vegetable broth

   •   1/2 cup creme fraiche, sour cream or plant-based alternative

   •   1 tablespoon Dijon mustard

   •   1 tablespoon flour

   •   Olive oil for sautéing

   •   Salt and pepper to taste

   •   Fresh parsley for garnish

   •   Cooked egg noodles or mashed potatoes

Instructions:

1. Sauté mushrooms in olive oil until browned, then remove and set aside. black pearls are hardy mushrooms so give it some time.

2. Sauté onions and garlic in the same pan until softened.

3. Stir in flour and cook for 1 minute, then add vegetable broth, mustard, and bring to a simmer.

4. Return mushrooms to the pan, then stir in creme fraiche, simmering until thickened.

5. Serve over egg noodles or mashed potatoes and garnish with parsley.
