Chanterelle Bisque
A creamy, silky bisque with the earthy depth of chanterelles, perfect for a cozy evening.
Ingredients
• 2 tbsp butter
• 1 small onion, diced
• 2 cloves garlic, minced
• 4 cups chanterelles, cleaned and chopped
• 1/4 cup dry white wine
• 4 cups mushroom broth or whatever broth
• 1/2 cup heavy cream or coconut cream
• Fresh parsley, chopped, for garnish
• Salt and pepper, to taste
Instructions
1. Sauté Aromatics and Chanterelles: Melt butter in a large pot over medium heat. Add onion and garlic, cooking until softened. Add chanterelles and cook until they release moisture and start to brown.
2. Deglaze and Simmer: Pour in white wine, scraping up any browned bits. Add broth, bring to a boil, then reduce heat and simmer for 20 minutes.
3. Blend and Finish: Use an immersion blender or regular blender to purée the soup until smooth. Stir in cream, season with salt and pepper, and garnish with fresh parsley.
